From Jolinda Hackett, your Guide to Vegetarian Food
Are you resolving to go vegetarian or even vegan this year? Congratulations and welcome to the other side! Or maybe you're just hoping to eat healthier, maintain your weight or drop a few pounds. But just how do you plan on achieving your goals? Making meaningful lifestyle changes isn't always easy.

Using a few goal-setting and NLP techniques, here's a few tips when thinking about making changes in the coming year:

  • Think positively and make affirmative statements, rather than negative (ie. "I WILL eat healthier", rather than "Don't eat junk food").
  • Be as specific with goals as possible ("Eat more whole grains and vegetables" rather than "Eat healthy").
  • Use visual imagery to help your subconscious and your mind visualize and focus on your goals. Change your computer's desktop background to photos that reflect your goals.

  • Welcome, new vegetarians!
If you're resolving to go vegetarian this year, welcome! Resolving to lose weight this year?
Resolving to lose weight this year? Specific goals, or "baby steps" will help keep you focused and on track rather than vague ideas. That's why "reducing calories" is a much better goal than "lose weight". If this is on your to-do list in 2011, here's a few places to start:
  • Low-calorie vegetarian recipes
  • Fat-free vegan recipes
  • What are raw foods?

  • Eat more greens!
I resolve to eat more greens just about everyday. Fortunately, I really like eating spinach and broccoli, and I love collards and kale if they're prepared properly. There's about 5000 reasons why just about everyone should eat more greens. Need just one? They're the healthiest food on the planet and packed full of just about everything you need, including calcium, iron, protein and lots of vitamins.

Eat at least some of your greens raw, as in this pictured spinach and beet salad, to get the most nutrients.

  • Spinach, beet and orange salad Topped with a homemade maple vinaigrette dressing. Pictured.
  • Spinach Dijon salad Another fresh green salad recipe.
  • Quick vegan creamed spinach recipe Only four ingredients - no excuses not to eat your greens!
  • Spinach and mascarpone cream soup Yes, it's as delicious as it sounds.
  • Raw kale chips These crispy snacks are great when you're craving chips (or crisps, if you're British!)
